This creamy lemon curd is made from 4 simple ingredients. Super easy to prepare and lemon gives a fresh taste to the curd. The perfect combination of the sweet and sour flavour.
I use this curd on top of cakes and even put it into my overnight oats. My favourite cake with the curd is Ricotta cheesecake with lemon curd.
Health benefits of lemon
Lemon is a good source of folate and vitamin C, which is one of the most important antioxidants in nature. Contain unique flavonoid compounds that have antioxidant and anti-cancer properties. Vitamin C improves the immune system, it protects you from illness and it increases circulation thanks to its volatile oil content.

Ingredients for 0,75 l lemon curd:
- Juice and zest of 4 lemons
- 4 eggs
- 400 gr (2 cups) powdered sugar
- 110 gr (0,5 cup) butter
How to make the curd?
Before grating and cutting the lemon, wash the skin so that any dirt or bacteria residing on the surface will not be transferred to the fruit’s interior. Grate the 4 lemons then squeeze them.
Put all ingredients into a heat-resistant bowl. Place this bowl over a deeper pan filled with boiling water in it. Make sure that the heat-resistant bowl’s bottom doesn’t reach the boiling water, we don’t want to overheat the curd. Stir it all of the time.
After 10-15 the mixture will start to thicken. When the curd makes a layer on the side of the bowl and coats the back of a spoon, remove it from the heat. Set aside to cool.
You can store it in the fridge for many weeks. I can’t say exact time because it’s never stayed there more than 2 weeks.
