First, I baked it for my friend’s birthday, who loves blackberry. When she and the surprise friends tasted the pie, they said I outstripped myself. The magic is in the blackberry curd, the best is that you don’t need magic power! It’s impossible to ruin it, only need to mix the ingredients and be careful not to burn it. Okay, maybe it’s possible, but hardly 😉 I hope you are interested now.
I celebrate the berry season (and my birthday) with this blackberry pie. It’s much better from fresh blackberries than frozen ones. Hurry, go to the market to buy fresh berries!
Health benefits of blackberry
Blackberry is rich in vitamin C, K and has antioxidant properties. It helps reduce blood pressure, protect against heart disease and prevent cancer.
Blackberry contains also both types of fiber: soluble and insoluble. Soluble fiber dissolves in water, and it helps maintain a healthy level of cholesterol and lowers blood sugar level. Insoluble fiber does not dissolve in water, it supports healthy digestion.

Tips and tricks before starting
I have a trick how to make crumbs from the biscuits. Place the biscuits into a plastic bag and close it. Roll them on a board with a rolling pin.
Every oven works differently, so 1st time check the cake before the required baking time. I baked it on 175 ºC (347 ºF), but maybe your oven is stronger, so be careful not to overbake the cake.
Preparation time: 60 min
Baking time: 15 min
Ingredients for 32 cm pie form
For the walnut crust
- 150 g (1+1/2 cup) biscuit, pulsed into crumbs
- 150 g (1+1/2 cup) walnut, grated
- 2 tablespoons brown sugar
- 1 tablespoon grated ginger
- 100 g butter, melted (+ few grams to grease the cake form)
For the blackberry curd
- 500 g (2+1/2 cup) blackberry (+200 g for decoration, optional)
- 200 g (1 cup) brown sugar
- 3 eggs + 2 egg yolks
- pinch of salt
- 1/2 cup (125 ml) fresh lemon juice = juice of 2 big lemons
- 50 g butter
How to make the blackberry pie?
1st step is preparing the walnut crust
Preheat the oven to 175 ºC (347 ºF). Grease your cake form with butter and set it aside.
As I said at the Tips and tricks, I have a trick how to make crumbs from the biscuits. Place the biscuits into a plastic bag, close it. Roll them on a board with a rolling pin. Or put the biscuits and walnut into a food processor, process until they become fine crumbs. I used the butter biscuit because it works well with walnut.
Mix the grated biscuit and walnut with brown sugar and ginger, then add the melted butter and stir until the mixture is well combined. Put the crust into a 32 cm pie or cake form, press the mixture also up to the side.
Bake it in the oven for 15 minutes, then set aside.
2nd step is the blackberry curd
Put the blackberries, brown sugar and 1/4 cup of water into a saucepan, stir them on medium heat few minutes long. Cover it and lower the heat, simmer for 15 minutes. Remove the pan from the fire, puree the mixture with a hand blender until completely smooth. Try to use a taller pan to avoid the puree splashing everywhere.
Push it through a mesh strainer with a spoon, do not miss this step, we don’t need the blackberry seeds in the curd.
Place back the puree onto the heat, whisk the puree, eggs, egg yolks, salt and lemon juice together. Stir constantly for 10 minutes until it thickens. Finally, add the butter, stir until smooth.
Set aside to cool down for few hours, then pour the curd onto the crust. Wait few hours and put into the fridge.
See, it wasn’t that hard 🙂
Decoration as the last step (optional)
Aaaaaand it’s ready! Unless you don’t want to decorate it. I decorated it with blackberries and crushed walnut. You can also add lemon zest, ginger or other berries to make it more colourful.
